MINT ICED TEA

You saw in our last post that our little mint plant is growing wonderfully, on our old ironing board by the window. So as I watered the plants this morning I realised I should think of something to make with it’s juicy little leaves.

Here is the result, mint iced tea.

I used a handful of fresh leaves, a few teaspoons of green tea, the juice of a lime and added sugar till I was pleased with the sweetness, and naturally, a jug of boiling water. I left all the ingredients to infuse for an hour or so, before bottling  and leaving to cool. And finally, added a few extra mint leaves in each bottle.

Simple but tasty, and definately the perfect accompaniment to a book and some sunshine on this clear spring day.
