HOME FOR LUNCH

When the sun came up this morning the temperature was 6.4'C and its only April 2nd. Dave was sure to grab one of his winter jackets as he headed out the door and off to work. Here's hoping this cool minimums stick around, because we love the cooler weather.

This morning the scent of nutmeg and cinnamon is wafting through the house, as the sun brings warmth through our windows. Dave will be home for lunch, and we thought pumpkin soup would suit this autumn day perfectly.

Today I pulled the first potato from our vegetable patch, and judging by our potato plant, I'd say many more are on their way. This one was only little, but I couldn't help my excitement, as it went straight into our soup.
I haven't even finished my first coffee, and already, I'm preparing for lunch.

The recipe comes from the 'Commonsense Cookery Book'. 

ingredients
1/2kg pumpkin (I never stick to this I just use whatever I buy, usually around 800g)
1 large onion
2 chicken stock cubes (I've also used vegetable stock before)
2 cups of water
1/2 potato (I usually use 1 or 2 potatoes)
Salt (to taste)
Pepper (to taste)
Ground nutmeg (to taste)

I also added some ginger root, and ground cinnamon, which went down a treat.

You place all the ingredients (expect salt, pepper & nutmeg) in a pot and cook until the potatoes and pumpkin are tender, then puree it in a blender. Combine with salt, pepper & nutmeg. Heat gently and serve sprinkled with chopped parsley and a swirl of yogurt or sour cream if liked.
